Warm Spiced Sweet Potato Soup

Obviously its warm – its soup – but its warm as in ‘mmm so warming’ you get me? Anyway – this is a bit different to the classic sweet potato coriander combination. Its spiced up with turmeric, paprika and nigella seeds and it is super simple to make – no excuses when reaching for that tin of Heinz Tomato Soup in your cupboard. Its a case of bish, bash, bosh, done and you have a filling healthy lunch for the rest of your week or a great starter for a dinner party.

Ingredients

Prep 10 minutes Cook 30 minutes Serves 6-8

2 Onions, chopped

1 tbsp Coconut oil (or olive oil)

4 Garlic Cloves, peeled

2 Carrots, chopped

2 Celery Sticks, chopped

1 tbsp Nigella Seeds

2 tsp Paprika

2 tsp Turmeric

2 Sweet Potatoes, peeled and chopped

1/2 cup Red split lentils

3 cups Vegetable Stock

400ml Coconut milk

Method

ONE. Heat the oil in a pan over a medium heat – add the onions, carrots, celery and garlic and saute for 5 minutes until softened. Add in the spices a cook for a further 1-2 minutes.

TWO. Add in the sweet potato and lentils and pour over the stock. Leave on the heat for 20- 30 minutes until the sweet potato is soft and the lentils are cooked through. Pour in the coconut milk and remove from the heat.

THREE. Using a hand blender or stand mixer, blend until smooth and serve. Have it as it is or top with seeds, a drizzle of cream or some extra spices.
