GINGER PROTEIN ENERGY BALLS (v)

A little ball of sweet ginger-y energy full of protein from Prana Protein

Ingredients

1 cup cashew nuts

9 medjool dates (pitted)

2-3 tsp ginger

1 scoop (40g) unflavoured protein powder (I use Prana Protein)

Prep 10 minutes Serves 12 balls

Method

ONE. Place the cashew nuts into blender and blend until crumb texture forms.

TWO. Add in the rest of the ingredients and blend again for approx 2 minutes. Test the texture of the mixture to see if it sticks together

THREE. Form the mix into 12 balls and refrigerate.

TIP: I wrap mine up with squares of baking parchment so they’re easy to take out and about.
